Nigiri arrives mid-meal here, folded into a procession of appetizers, sashimi, and soup rather than saved for a dedicated sushi course. This Michelin-starred sushi kappo, a spin-off from the celebrated ryotei Kikunoi, treats the format as a starting point: tiger prawn is char-grilled in the shell, conger eel gets black seven-spice and pepper-tree buds. Guests also choose from serving ware made by the legendary ceramicist Rosanjin, which is either a detail or a whole reason to go.
