  1. The name isn't decorative: the whole kitchen philosophy at this two-Michelin-star Scandinavian restaurant runs on tension, rich against bright, soft against sharp, local against international. It sits in what used to be an industrial stretch of Oslo, and the room keeps that mood, stark and low-lit except where the open kitchen glows. The food follows the same logic, flavors pulled in opposite directions until they hold. Serious cooking, serious room.
