The name is a play on "cuoco," Italian for cook, which tells you something about the ambition and the cheek in equal measure. This small Madrid restaurant runs a short à la carte alongside a tasting menu that leans creative, fusing Latin American and Asian flavors with a lot of heat and spice doing the real work. The two Venezuelan chefs behind it have a point of view, and the food is louder than the room.
