A kushiage counter on the seventh floor of an Azabujuban building, where deep-fried skewers arrive tasting nothing like deep-fried skewers. The kitchen skips eggs and milk in the batter, fries in plant-based oil at high heat, and somehow the result feels light. Pork shoulder and quail eggs anchor the menu; buttered potato with truffle or wagyu-wrapped egg yolk mark the wilder end. The meal closes with fried rice finished in hot broth, which is a genuinely civilized way to go.
