Tucked beside Shimogamo Shrine in the Tadasu-no-Mori forest, this kaiseki restaurant holds two Michelin stars and moves at the pace of a tea ceremony, which is probably not a coincidence. The chef trained in the performing arts, and it shows: soup lids etched with dew, sashimi arranged like clouds, Kyoyaki ceramics dressed with cut flowers. Kyoto kaiseki is already theatrical; here it tips into something closer to stagecraft.
