    A single bite of boudin noir, fried in batter and colored black with bamboo and charcoal, is how Yusuke Takada opens his case at this sleek modern French restaurant in Osaka's business district. Takada trained in Lyon and cooked at Le Taillevent and Le Meurice before coming home to do something quieter and stranger, folding subtropical citrus from his native Amami Oshima into precise French technique. Two Michelin stars and a spot on the World's 50 Best list.
