    The dining room of this rural restaurant-hotel in the Pas-de-Calais is open to the garden on one side and looks like a modernist art gallery on the other, with a vast stainless-steel kitchen blazing at the far end. Chef Alexandre Gauthier reworked his father's 16th-century farmhouse into something that still startles first-timers. The cooking stays rooted in the Côte d'Opale, even as the room quietly dares you to place it.
