    A mezcal bar a few blocks from the main square with a focused list sourced from across Mexico, leaning heavily on Oaxaca. You can work through the classic varieties neat, or let them talk you into a hibiscus or chile margarita, which is a perfectly reasonable detour. Small Oaxacan plates keep things grounded. The kind of spot where you arrive for one drink and leave having taken an informal education in agave spirits.
