    Named for a Caifanes song with Cuban roots, this Sinaloan cevicheria in Tulum Centro is a little cumbia, a little rock and roll, and a lot of raw seafood. The Torresona, a ring-molded tower of shrimp, tuna, octopus, and mahi-mahi layered with avocado and salsa negra, tends to stop the table cold. Aguachiles, gobernador tacos stuffed with Gouda and grilled shrimp, and cold beers keep things moving under salmon umbrellas and a corrugated steel roof.
