Rincon de Jade
Mexican
A market stall inside Mercado de Tulum where Keily Medina cooks the Yucatán dishes that every other restaurant in town quietly ignores. The chirmole de pollo is a deep, dark stew blackened by recaudo negro; the frijol con puerco comes loaded with epazote and calls for a raw habanero between bites. Sunday brings mondongo, a slow-cooked tripe and offal soup stained red by achiote, which Medina will tell you is the cure for whatever ailed you the night before.
