The name is a riff on barbacoa, which tells you exactly where to focus at this East Austin taco trailer. Picnic tables sit under shade and fans, and the barbacoa itself is slow and serious, folded into tacos with pinto beans and chicharrón or wrapped in a beet-red tortilla with gooey cheese. A Michelin Bib Gourmand and a James Beard semifinalist nod confirm what the line already suggests. A second location has since opened on 6th Street.
