A Michelin-starred Franco-Japanese restaurant that sits, with great self-confidence, on the first floor of a crêperie. The chef weaves Breton seafood and buckwheat through Japanese techniques, so langoustine and kombu share a bowl as if this were always the plan. The result of a Brittany-meets-Japan philosophy that was road-tested in Tokyo before it came home. The bay of Mont Saint Michel sits outside the window, doing its part.
