The former Bordeaux Institute of Zoology has been turned into a 40-room hotel where the theme goes deeper than a lobby mood board. Guest rooms are grouped into wings named Geology, Zoology, and Botanic, with clay walls, original brickwork, and wallpapers of forests and fauna doing the decorating. A bistronomic restaurant, a cocktail bar, and a summer rooftop with city views round things out, while a hammam and Jacuzzi await anyone who upgrades past the Classic tier.
