    Ten seats arranged in an L-shaped counter, all of them facing the kitchen, is the whole room at this two-Michelin-star tasting menu restaurant in Humaitá. Chef Rafael Costa e Silva runs the counter himself, working through a 15-course menu built around produce from his own gardens, most of it vegetable-forward in a way that never feels like a compromise. It holds a spot on the World's 50 Best Restaurants list, and booking ahead is non-negotiable.
