An old Basque farmhouse inn expanded with a modernist wing that has no business working as well as it does. Cédric Béchade, trained under Alain Ducasse, runs both the auberge and the French-Basque kitchen, so the food is the point, but the Flamant-furnished rooms with their weathered textures and clean lines are good enough to stay for on their own. It holds a Michelin Key.
