You pull off a commercial road outside Padua expecting nothing, then walk into a dining room so quietly lit it takes a moment to realize it's still afternoon. Le Calandre is a three-Michelin-star restaurant run by the Alajmo brothers, who designed the space and most of the porcelain on the table. The menu lets you mix tasting courses freely, which feels generous at this level. One dish wraps eggshell into pasta dough for an audible crunch. It also holds a spot on the World's 50 Best list.
