    Chandeliers, panelled walls, and tableside finishes signal exactly what Philippe Etchebest had in mind: a proper old-school brasserie doing the classics with a straight face and full commitment. Egg mayo, duck à l'orange, pâté en croûte, pike quenelles in lobster sauce, the kind of menu that never apologizes for itself. Diners order à la carte and settle in, which is the only sensible pace for a room like this.
