Fermentation jars line the shelves of this old La Croix-Rousse café, which doubles as a serious creative restaurant upstairs. The chef, a Mexican transplant who came up through Lyon's fine-dining circuit, runs a deliberately short menu built around flame cooking, organic local vegetables, and biodynamic wines. The combinations are precise without being precious, and the plant-forward cooking has a logic that makes the brevity feel like a feature, not a limitation.
