  1. Every course arrives when all thirty plates are ready, chefs carrying them out in unison while someone narrates to the whole room. Le Mousso is a tasting-menu restaurant where the chef's background in fine art bleeds into the choreography: the sommelier takes a turn at a makeshift stage, the kitchen cheers each dish, and the whole thing runs about three hours. A Michelin Selected Restaurant, and dinner here is closer to a performance than a meal.
