A chef who came up under Éric Guérin at La Mare aux Oiseaux returned to his hometown on the Atlantic coast and quietly took over his parents' brasserie. The room is stripped-back and light-filled, and the cooking is creative without making you work for it, market-driven plates that feel at home somewhere this small. His wife runs the floor with the kind of unhurried attentiveness that most restaurants promise and few deliver.
