This Michelin-starred fine dining restaurant in Montpellier runs a single set menu built around whatever arrived that morning, Mediterranean fish, shellfish, veal, sourced short and listed by ingredient only. The chef calls it "cuisine d'arrivage," and the cooking is precise, spare, and full of personality.
