A bowl of steaming risotto, drawn from the tradition of freshly cooked rice in chakaiseki, arrives early and sets the tone for everything that follows. This is a three-Michelin-star contemporary French restaurant in Nishiazabu where Shinobu Namae builds prix fixe menus around Japanese producers and seasons. The meal closes with a weak matcha tea borrowed from the Sowa tea ceremony, which is a quietly elegant way of telling you it's time to go.
