Simon Rogan's three-Michelin-star restaurant occupies an old forge in the Lake District village of Cartmel, and the anvil it's named for shows up as a dessert. The multi-course tasting menu leans on produce grown daily at Rogan's nearby farm, with the kitchen rearing its own meat and keeping a full-time forager on staff. The room is spare and informal enough that it reads more like a lively gastropub than a hushed fine-dining cathedral.
