Two intimate dining salons divided by a stone and glass screen, André Fu's design makes this French fine dining room on the third floor of the St. Regis feel simultaneously grand and hushed. Chef Olivier Elzer holds two Michelin stars and a Forbes Five Star, and his menu traces a genuinely thought-through conversation between classical French technique and Cantonese sensibility. The Hokkaido sea urchin arrives in a caviar box, which tells you roughly where the evening is headed.
