The bar in the cellar comes first: aperitifs and nibbles among exposed old brick before the team walks you upstairs for the tasting menu proper. Nordic technique, Czech ingredients, and Asian spice from the chef's own background make for a combination that doesn't really exist anywhere else. Twelve or eighteen courses, a long communal table or smaller rounds, and a Michelin star keeping the room quietly self-satisfied. Prague's Vinohrady neighborhood hides it well.
