A porcelain sculpture of thousands of bougainvillea petals hangs overhead in this glass-roofed courtyard restaurant at the George V, which holds two Michelin stars and serves no meat by design. The chef's cooking orbits vegetables, dairy, and seafood with a precision that sounds ascetic until the sauces arrive, light and salt-edged and quietly surprising. Formal but never stiff, it's the kind of place where the service notices everything and says very little.
