    French

    The name means "simmered," which tells you something about the chef's approach: unhurried, precise, nothing showing off. This is a casual French prix-fixe counter in the Mission, built around a weekly four-course menu that follows Northern California's seasons and a natural wine list that would feel at home in a Paris cave. The chef trained in France via Japan, and the room, all warm wood and open kitchen, has the nerve to be unpretentious about it. A James Beard nominee.
