The name comes from Nahuatl, the Aztec word for a farming system that replenishes the soil, which tells you something about how seriously the chef takes the philosophy here. This is a contemporary Mexican restaurant with a Michelin star, built around corn, cacao, and chilies sourced from Mexico and cooked over a wood-fired grill, with Japanese ingredients folded in where the traditions allow them.
