A satin-smooth wood counter on the second floor of the Two Rodeo Drive galleria, where Rodeo Drive's foot traffic floats by below and Derek Wilcox runs a quiet, focused omakase above it. The American-born chef trained extensively in Japan, and that comes through: cuttlefish from Kagoshima, needlefish from Miyagi, bluefin lightly smoked over rice straw. The nigiri is the reason to stay attentive. Miura holds a Michelin star.
