The hủ tiếu nam vang, with its clear broth and shrimp fritter, is the kind of thing people describe to strangers, and the beef stew comes with a fluffy loaf of bread for soaking up the braise. Lunch for under fifteen dollars, served by someone who has clearly made these recipes a thousand times.
