    A glass-fronted dining room set inside a centuries-old Lancashire country house, with a walk-in cheese room and five beehives on the grounds. Mark Birchall's tasting menu restaurant holds three Michelin stars, and a meal moves through the estate rather than staying put: snacks at the bar, a kitchen tour, then the main procession in a high, Scandic-cool room. The kind of place where the surroundings are doing serious work alongside the food.
