    Mube is the Japanese name for a vine fruit considered a longevity charm, and the chef who named his restaurant after it makes fermentation the quiet obsession of the menu. This intimate Kyoto kaiseki spot holds a Michelin star and turns out narezushi, house miso, and fish sauce the chef makes himself, with dashi threading everything together. The restraint is the point: fermentation's funk is there, but never louder than the dish needs it to be.
