Musoshin Ramen

The milk bread comes out of the oven in perfect little rows, which is not a thing you expect from a ramen shop. Tucked off the main strip in Roncesvalles, Musoshin built its broths around a vegetable base rather than the usual pork fat wallop, and the house-made noodles go into every bowl. The chef learned her craft over video calls with the original Kyoto location, which is either very modern or very old-school, depending on how you look at it.
