    Kappo dining means the chef cooks in full view of the counter, and here that openness extends to conversation: the chef talks, jokes, and reads the table as naturally as he reads the food. Dishes follow a kaiseki rhythm but bend with the mood of the day and what the guest actually wants. The restaurant's name pays tribute to the old Naniwa kappo tradition, and that craftsman seriousness comes through in every unhurried exchange.
