Guillaume Sanchez is the heavily tattooed chef you've seen in food circles, and his Michelin-starred tasting counter in the 9th is exactly as theatrical as that sounds. Black and gold interior, open fire doing most of the heavy lifting, fermented vegetables and cold-steamed extractions setting a mood before the more explosive moves arrive. Sitting at the counter puts you in the middle of it, which is the point.
