Nishiazabu Ōtake
Japanese
A Nishiazabu dining room rooted in the ryotei tradition of Gifu, where the chef's idea of keeping things seasonal extends to stuffing croquettes with hair crab in spring and porcini in autumn. The char grill handles both fish and meat, and come winter, Gifu hunters send duck and Asian black bear, which land on the menu as a matter of course. Japanese in spirit, quietly indifferent to what that's supposed to mean.
