Down a quiet city-centre alley off St Stephen's Green, One Pico has been around forever and has the loyal regulars to prove it. It's a modern French restaurant where the kitchen leans on classical technique, and the sauces in particular do a lot of heavy lifting. The wine list is extensive and runs across budgets, with a sommelier who seems to genuinely enjoy the work. Dress smart; this is not a casual Tuesday.
