  1. The chef here trained at Tsuji Culinary Institute and cooked at Nobu before settling into a ramen shop in Ahwatukee, which is either a surprise or exactly what someone like that would do. The menu runs classic: tonkotsu, miso blended from Hokkaido pastes, rice bowls, takoyaki. The broth is unhurried and clear in its intentions, the kind of ramen that makes the fast-food versions feel a little embarrassed about themselves.
