Roy Caceres, Colombian-born and Rome-based, pulls from Latin America, Asia, and the Mediterranean in ways that feel like they shouldn't work and then very much do. This is a Michelin-starred tasting-menu restaurant near the Veneto, running five or seven courses, with a shorter path available at lunch. Vegetables come partly from the team's own gardens outside the city, and Sardinian touches nod to the chef's wife's roots.
