A third-floor kaiseki spot in Ningyocho where the menu shifts with whatever the chef found worth buying at the market that morning. The seasonal hassun course shows off that instinct most clearly, each element chosen to say something about the time of year. The dish he keeps coming back to, though, is oyakodon, a recipe he's been refining since his apprenticeship days and apparently has no intention of stopping.
