The spring water for the dashi is drawn fresh each morning, which tells you something about how seriously the kitchen takes its foundations. This is a Japanese kaiseki restaurant where the tableware, the Kyoto vegetables, the farmers, and the potters are all quietly part of the story. The meal closes with handmade sweets. The chef trained in Gion and brought back a deep feeling for what Kyoto cuisine actually owes to the people around it.
