    Swiss pine panelling lines the walls of this cosy hotel dining room, and it smells like an alpine forest and good sense. The kitchen runs set menus of five or seven courses, leaning on local salmon trout and fallow deer to tell a quietly modern version of the regional story. A cellar of over 30,000 bottles keeps the sommelier busy. It holds a Michelin star, which explains why the tables fill early and the service never looks ruffled.
