Pallet is a bright, airy coffee shop on Kingsway, part of a roaster group with several Vancouver outposts. The beans lean Ethiopian and Colombian, a long black with single-origin espresso is the move, and fresh pastries cover the basics. The open industrial room with high wood-truss ceilings fills easily with laptop workers and actual conversations alike.
