Pampín Bar
Regional Spanish
A big communal table anchors the bare-concrete dining room tucked behind an unremarkable door in Santiago's old quarter. The chef calls it "cocina de barrio," neighbourhood cooking, and means it: homemade empanadas, escabeches, stews, and whatever came off the boat that morning. The kind of place where the food tastes like someone's grandmother made it, which is exactly the point.
