Tortillas made on-site and griddled all day set the tone at this counter-service taqueria tucked into Finn Hall in downtown Houston. The chicharrón, cured pork belly with pumpkin seed vinaigrette and crispy shallots, is the kind of thing you think about later. Breakfast tacos and a cult carrot taco round out a menu that's more considered than the food-hall setting suggests. The Michelin Guide awarded it a Bib Gourmand, which tracks.
