A Creole barbecue trailer parked behind a kolache shop is either a strange detour or exactly the point, and at Parish it's the point. Cajun spice rubs and Tabasco glazes nudge central Texas classics sideways, and the menu runs past brisket into pulled duck and boudin. Sides like pimento mac topped with Zapp's chips and crawfish cornbread stuffing do their own convincing. The Michelin Guide awarded it a Bib Gourmand.
