Wooden shelves stacked with decorative plates, original stenciled walls, and ceiling fans that look like they've been there forever set the tone at this old-school Basque bistro in Saint-Jean-de-Luz. The menu runs in French and Basque, which tells you where you are, and the food follows: tripe, cod, Biscay-style tuna, beef tartare, steak in pepper sauce. Hearty, unfussy, and exactly as regional as it sounds.
