Eight seats, one seating, everyone starts together: Playing Solo runs like a small theater where the kitchen is the stage. Chef Luis Caballero cooks Japanese-inflected fusion with detours through France and Scandinavia, all built on local ingredients, at a counter inspired by the izakaya format. The seasonal tasting menu is the only real option, and the room fills and empties as one, which somehow makes strangers feel less strange.
