    The French oak tables were sourced with the same care as everything on the plate, which tells you something about how Gaëtan Gentil runs this Michelin-starred fine dining room in the Confluence quarter. The open kitchen anchors the space, turning out seasonal French cooking built around Rhône Valley produce, wild herbs, and sauces that do serious work. Nearly a thousand organic and natural wines round out a meal that manages to have a conscience without making you feel lectured.
