Exposed brick, terrazzo tables, and industrial lamps give Pristine the feel of a New York coffee shop that got lost and ended up in the 9th, which is exactly what the owner intended. It's a plant-forward bistro where the kitchen chases the deep, umami-laden flavors of classic French cooking using mushrooms, grains, and vegetables rather than the usual suspects. A little meat and fish still appear on the menu, for the unconvinced.
